So far I have not found much in the way of modifying (especially hiding) things on the ribbon I don't use, or want placed in a different location. For example, in Office 2003 you could just click and drag sub-menus around to rearrange them, as well as delete/add icons for commands to each sub-menu.

Has Microsoft left us who like to modify/customize any other options than the "Quick Access" toolbar?

Is there a way to hide/remove icons/commands from within the subpanes of the "ribbon"?

You cannot modify the ribbon, only the Quick Access toolbar.

You cannot hide sections of the ribbon, but you can minimize the whole ribbon by clicking the down arrow next to the Quick Access toolbar.

There's more information on minimizing the ribbon in Office 2007's online help.

I find the best way is just to double click on the tabs of the ribbon to minimize it and restore it.
