This learning site located in Microsoft Office Online: http://office.microsoft.com/en-us/help/FX102254211033.aspx provides some helpful tips and concepts on using the new 2007 applications, including OneNote, InfoPath, etc. My current favorite articles are:

PowerPoint without bullets - I'm currently developing a course using some of the concepts in this article.

Hidden gems in Excel 2007 - I especially liked the tip on right-clicking the sheet tabs navigation buttons!

The top 10 employee bungles using Office - I am somehow comforted in knowing that Microsoft employees can be as baffled about Office as we are sometimes!

Bill Gates: How I use Office - In case you're curious...
