| Is there a way for someone to make and send appointments so they don't appear on their own calendar? I have been unable to find a solution for this.

As the sender (Outlook Term: Meeting Organizer) there is no way to exclude yourself from the appointment. Only the sender can modify the sent item so it requires that they maintain a copy of it.
Recipients can accept, decline, or suggest a new time (suggest a new time is only in the full client, not OWA), but cannot take ownership of an appointment they recieve (meaning they cannot become the meeting organizer).
The sender could however change the status of their copy of the appointment to "Show Time As: Free" so they are properly represented if a new appointment for them is needed.

Once we get the desktop version, you can assign calendar items to categories. You could create a category for meetings you organize and set up a view (filter) of your calender to not show that category. Then you can view that category when you need to access the items, but not have it always display on your calendar. _________________ Heather Vanderwielen

That's a great use of Categories. In fact you can assign Categories to lots of things to help you identify them from one another. You can create your own and coordinate with others to create categores that make sense across your department, division and units.
Another thing to consider is that if you are in a primary role of sending appointments for others, you may consider having an alternate account created from which you can send them so they do not interfere with your own personal appointments.
