Overall, I am like Word 2007 very much.
However, one change that I have noticed that is a little annoying is the default paragraph line spacing that is loaded in the normal.dotx file.
Any time a Hard return is entered, a 10 pt space is added between the lines/paragraphs.

To change this:
Click on the Home ribbon
In the Paragraph section, click on the Line Spacing button
Choose Line Spacing Options
In the Spacing section, change the After: setting to 0
Click on the Default button
You will be prompted "You are about to change the default alignment, indentation, and spacing of the paragraphs in this document. Do you want this chnage to affect all new documents based on the NORMAL template?
Click Yes

There will now be no extra space

One reason I think that they have done this is because it saves having to do 2 enters after a paragraph. It's sort of like having to break the bad habit of doing two spaces after a period since the extra space has now been added to the period. That's how I view this change anyways but if you are not using word to write letters I can see how this can be annoying.

Do note that the method described above only solves the problem for the document you are in. It does not change it for every time you create a new document. If you really want to remove this feature you have to modify the normal style. The easiest way is to right click on the normal style and then click on modify, select the format button down in the lower left hand corner, choose paragraph and change it in there. Don't forget before leaving the modify window that you click the radial button on the modify window that states - New document based on this template - to change it for every time you create a new blank document before you click OK.

I just recently found out that the style "No Spacing" addresses this issue and does not have the paragraph after of 10 points to it. So if you do not want to alter your normal style sheet you can just click on that style that says "No Spacing" without having to edit anything.
