Microsoft has removed the venerable black & white pattern fill feature from all the Office 2007 applications, so if you want to do something like fill a chart column series with a crosshatch pattern, the option is no longer available. But the crosshatch pattern can still be achieved by inserting a picture of a crosshatch pattern into the chart series. The company at the following link has generated a bunch of these for free download:

Once unzipped and stored in a single folder, the different patterns will be visible from the Insert Picture dialog of the applicable Office application, or they can be seen within the Windows environment by using the View -> Thumbnails option.
